It's Cookie Friday!
It started two years ago with a desire to try new cookie recipes. What better taste testers than the elementary school kids when they walk home on Friday afternoons! Now a big part of the fun is hearing the whole neighborhood yell "It's Cookie Friday" as they run home from school. This blog is a simple compilation of those cookie recipes.

Chocolate Chip Crunch Cookies
Ingredients:
1 cup butter
1 cup white sugar
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla
2 eggs, lightly beaten
2 1/2 cups flour
2 cups rice krispies
2 cups milk chocolate chips
Directions:
1.Preheat oven to 375 degrees F.
2. Melt butter and pour into bowl of stand mixer.
3. Add sugars and mix until well combined.
4. Add eggs and vanilla. Mix well until completely combined.
5. Add flour and baking soda. Mix until almost completely combined. If dough seems too sticky you might need to add up to another 1/2 cup flour.
6. Add chocolate chips and mix until almost combined.
7. Add rice krispies and mix until everything is combined. (Don't overmix though, you don't want the cookies to start to develop gluten and become tough)
8. Form dough into balls and place on parchment lined cookie sheet. I used a #50 scoop for mine (about 3+ teaspoons)
9. Bake for 8 minutes or until golden brown. Cool and enjoy!
